Garlic eScape Pesto

Ingredients:
scapes (green curly part of your garlic), parmesan cheese, walnuts(switch with any nut of your choice), salt, lemon, olive oil

***This recipe yields around 10 "servings"***

1.
Grab your nearest food processor or blender and place 6 ounces of scapes, 1/3 cup of parmesan cheese, 2 walnuts, salt (to taste), and 1 teaspoon lemon juice. Then turn on your food processor/blender (all the
ingredients amounts are negligible so put as much or as little as you'd like. 

2.
While your food processor/blender is running, add 1/3 cup of olive oil or add olive oil until your pesto is at your desired consistency.

3. Stop the food processor/blender and taste test. Add more of any ingredients that you may need for your desired taste level. 

4. Add to any pasta, flatbread, etc. and enjoy.

Roasted Garlic

Ingredients: garlic bulbs, salt & pepper, olive oil

1. Grab your bulbs of garlic (preferably 3-4) and cut the top off so that the cloves on the inside are exposed.

 2. Place your bulbs onto a piece of tinfoil (the open side of the garlic bulb should be facing out, away from the tinfoil), and drizzle 1/4 cup of olive oil onto your bulbs.

3. Sprinkle salt & pepper onto the bulbs, and continue by folding your tinfoil over your garlic bulbs (make sure to leave some space for steam to escape).

4. Place your foil covered bulbs in the oven for 45 minutes, then continue by uncovering the bulbs of garlic and baking them for another 15 minutes/until they are golden.

5. Take them out, let the bulbs cool down, squeeze your cloves of garlic out of your bulbs, and enjoy your roasted garlic!!!

Garlic Pesto

Ingredients: garlic cloves, parmesan cheese, walnuts (switch with any nut of your choice), basil, salt, olive oil

1.
Grab your nearest food processor or blender and place 1 cup of basil leaves, 3 garlic cloves, 1/3 cup parmesan cheese, 2 crushed walnuts, and salt (to taste). Then turn on your food processor/blender (all the ingredients amounts are negligible so put as much or as little as you'd like. 

2. While your food processor/blender is running, add 1/3 cup of olive oil or until your pesto is at your desired consistency.

3. Stop the food processor/blender and taste test. Add more of any ingredients that you may need for your desired taste level. 

4. Add to any pasta, flatbread, etc. and enjoy.

Honey Garlic

 Ingredients: chicken broth, brown sugar, honey, soy sauce, garlic, ginger root, water, cornstarch

Grab a saucepan and add 2 cups of chicken broth, 1/2 a cup of brown sugar, 1/2 a cup of honey, 1/4 a cup of soy sauce, 6 cloves of mashed garlic, and 1 teaspoon of minced ginger. Mix your ingredients and then bring to a soft boil (use medium heat). After it starts boiling, lower down the heat and let the mixture simmer for around 5 minutes.

2. Grab a bowl and mix 1/4 cup of water and 1 tablespoon of cornstarch. Pour the mixture into your saucepan and continue simmering until your sauce has become more thick and dense.

3. Enjoy your honey garlic sauce!

Garlic Dipping Oil

Ingredients: garlic cloves, olive oil, oregano, basil, salt & pepper 

1. Grab a bowl and a grater and grate 1 garlic clove into your bowl. 

2. Add 1/4 cup of olive oil, 1/2 teaspoon of oregano, 1/2 teaspoon of basil, and 1/8 teaspoon of both salt and pepper. Then mix your
ingredients. 

3. Enjoy your dipping sauce with a cracker or bread of choice.

Garlic Broth

Ingredients: garlic bulbs, olive oil, parsley, cilantro, salt & pepper

1. Take 2 bulbs of garlic a cut it in half to reveal the cloves on the inside, proceed to crush the garlic cloves of 3 of the haves (reserve the last half for later). 

2. Heat up a saucepan (medium heat) with 2 tablespoons of olive oil and cook them until garlic looks like it is golden brown (approximately 9 minutes). 

3. Grab a pot and add 2 quarts of water (bring to a boil), add your last garlic bulb half, a handful of parsley, cilantro, salt, and pepper to your boiling water. 

4. Turn the heat down and let your pot sit at a simmer until your garlic bulb is tender (should take 35 minutes approximately).

5. Add a bit more salt and pepper to taste. 

6. Strain your broth to get rid of any large pieces of garlic. 

7. Enjoy your broth either alone or with some noodles! 

Garlic Confit

Ingredients: garlic cloves & olive oil

1. Grab a saucepan and fill it with as many garlic cloves as you'd like. 

2. Cover the garlic cloves with olive oil (until the garlic is covered), add any herbs you may like.

3. Put the saucepan into the oven for 3 hours at 200 degrees Farenheight. 

4. Enjoy your garlic confit, spread it onto some crackers or toast. 

***Garlic Confit lasts for a long time!!! If refrigerated, it can last you up to 2 months!***

Spicy Garlic Chick Peas

Ingredients: rinsed chickpeas, garlic cloves, crushed red pepper flakes, olive oil, salt & pepper

1. Open 2 15 oz. cans of rinsed chickpeas and set them to the side. 

2. Grab a saucepan and put 3/4 cup of olive oil in it.  Grab 4 crushed garlic cloves and 1 teaspoon of chile flakes. Heat up your pan with your ingredients over medium heat and add your chickpeas into the pan.

3.  Cook for around 7 minutes and then take them off the heat, add salt and pepper, and enjoy with some rice or salad! 

Garlic Butter

Ingredients: unsalted butter, garlic cloves, parsley, & salt

1. Soften half a cup of butter at room temperature. 

2. Mince 2 cloves of garlic. 

3. Grab a mixing bowl and mix your butter and garlic with 2 tablespoons of freshly chopped parsley.

4. Salt to taste and then enjoy your butter on a loaf of bread or on some corn.
